About The Olive Tree
The Olive Tree was opened in 2004 by Martin Dobson (Head Chef) and Martin Say (Front of House), each involved in the restaurant business for 25 years. They spent 15 years together at “Frolics Restaurant” in Southerndown. There they received many awards, culminating in a Michelin Bib gourmand in the red guide in 2003 – one of only three granted in Wales at the time.
Since it’s opening, The Olive Tree has gained a solid reputation and critical applause for its belief in the classic French tradition, that stock and sauces prepared from first principles, are essential for good food.
In 2007, Martin Say relinquished his share of the business, and retired to southern France.
Head Chef Martin Dobson was trained by Robert Harrison, of the Roux brothers’ Gavroshe Restaurant in London. He has worked in some of the Britain’s finest country hotels, including the Priory Hotel (Bath) and Gravetye Manor (Sussex).
